Embossed Rolling Pin Cookies

Perfect for a wedding cookie table or holiday treat!

This is the best dough for embossed rolling pins—it won’t stick, and the cookies turn out beautifully detailed and delicious every time.


Yields: 25-30 cookies


Prep Time: 30 minutes | Chill Time: 30 minutes | Bake Time: 8 minutes | Total Time: 1 hour 38 minutes


Ingredients

200g (7oz) unsalted butter

150g (5oz) confectioner’s sugar

1 egg (room temperature)

A pinch of salt

400g (14oz) all-purpose flour

1 tbsp Spekulatius spice mix or

½ tsp mixed spice + ½ tsp cinnamon


Instructions

Preheat oven to 200°C (392°F).

Cream butter and sugar until pale and fluffy.

Mix in the egg until fully combined.

Sift together flour, salt, and spices, then mix into wet ingredients to form a dough.

Flatten the dough, divide it in half, and chill for 30 minutes.

Roll out one half on a lightly floured surface to 10mm (1cm) thick using a regular rolling pin.

Roll over the dough once with an embossed rolling pin to imprint the pattern.

Cut cookies into shapes and place them on a baking sheet.

Bake for 7-8 minutes, or until the edges are slightly golden.

Cool completely before storing in an airtight container.


Notes & Variations

Oven times may vary—watch for light browning at the edges.

Swap spices for vanilla or other extracts to enjoy these cookies year-round.


A Special Wedding Memory

This year, my daughter-in-law and I made these together for her wedding cookie table.


It was such a special experience baking them side by side, knowing they’d be part of her big day. The cookies were a huge hit at the reception, and I love that they’ll always be part of that sweet memory.
