Moromi crafts its soy sauces in small batches using traditional Japanese techniques.

 

The process begins with organic soybeans and locally grown wheat, which are transformed into koji, a key ingredient in soy sauce. The koji is combined with sea salt and water to create a brine. This mixture is aged slowly in barrels, allowing the flavors to develop depth and complexity. Once aged, the soy sauce is pressed, pasteurized, and bottled.

 

Tane koji is sourced directly from Japan to produce a shoyu with a deep and rich flavor profile. All other ingredients, including wheat, are sourced locally in Connecticut, where Moromi’s soy sauce brewery is based.

About Limited Edition Maitake Soy Sauce:

Moromi’s limited-edition Maitake Soy Sauce is made with locally foraged maitake mushrooms. Handpicked during the 2021 season, the mushrooms were blended with Moromi’s organic soybeans and wheat koji and barrel-fermented for over a year. The resulting soy sauce offers an amplified umami flavor with a distinctive richness.

 

Each soy sauce is packaged in a 5.1 fl oz glass bottle with a tamper-evident hinge cap for convenient pouring.
